Ingredients:


1. For the cookies:

Instructions:


1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.

2. Whisk together the flour, cocoa powder, baking soda, and salt in a medium bowl. Set aside.

3. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy using an electric mixer. Add the egg and vanilla extract, and continue to mix until well combined.

4. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing just until incorporated after each addition. Be careful not to overmix.

5. Drop rounded tablespoons of batter onto the prepared baking sheets, spacing them about 2 inches apart. Using the back of a spoon or your fingers, gently flatten and shape each mound of batter into a round shape.

6. Bake in the preheated oven for 10-12 minutes or until the cookies are set. Remove from the oven and let them cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

7. While the cookies are cooling, prepare the filling. In a medium bowl, beat the softened butter until creamy. Gradually add the powdered sugar and continue beating until well combined and fluffy. Mix in the marshmallow fluff and vanilla extract until the filling is smooth and creamy.

8. Once the cookies have cooled completely, match them up in pairs of similar sizes. Spread a generous amount of the filling onto the flat side of one cookie, then place its matching cookie on top to create a sandwich.

9. Repeat the process until all the cookies have been filled. Serve the whoopie pies immediately or refrigerate them for a couple of hours to allow the filling to set.
